Easter Muffins

Most of you seem to rather enjoy these so here is the recipe.

Freeze well

1 3/4c Flour
1 c Castor Sugar
100g Butter
1 c Yoghurt (flavoured is fine)
1/2 tsp Vanilla
Small Caramel Egg (or Peppermint Chocolate, rollo etc)
1 tsp baking soda
1/4 cup cocoa
1 egg
1/2 cup milk
1/2 cup chocolate chips

Sift dry ingredients togeather.
Melt butter, add egg, yoghurt, milk and vanilla mix until smooth.
Add liquid ingredients to dry, + Chocolate chips and fold until flour is dampened not smooth.

Add mixture to tins and push Caramel Egg into centre.
Bake 180*C for 10-12min. Leave in tin for 5min before moving to cooling rack.

Freeze for storage longer than a couple of days.
If frozen microwave ~30 secs to thaw
If not frozen microwave 10 sec to melt egg!
